    Hi everyone! It’s Auntie Grace writing from my Chicago kitchen.  If you’ve been wandering through the refrigerated section at Trader Joe’s lately, you’ve probably walked right past those little bags of fresh pizza dough. They sit near the cheeses and pre-made meals, usually priced at just two or three dollars. Today I want to share a simple trick that turns that humble bag of dough into bakery-quality gourmet pizza without any stress.  1. The Secret to Handling Fresh Pizza Dough  The biggest mistake people make with refrigerated dough is trying to roll it out straight from the fridge. When the dough is cold, the gluten is tight and it will keep springing back no matter how hard you stretch it. Take the dough out of its bag, place it in a lightly oiled bowl, cover it, and let it sit on the counter for at least 30 minutes to an hour. Once it reaches room temperature, it becomes soft, pliable, and incredibly easy to stretch by hand.  2. Choosing the Right Base and Toppings  You don’t need a fancy pizza oven to get a crispy, golden crust.
